Confirmation study of structure:

Gelatin vacant capsules are made by dissolving gelatin and auxiliary materials of capsules with suitable molds after dipping, drying, cutting and nesting. The whole process is purely a physical process without chemical changes. The main structure is the composition of gelatin, which contains about 16% of water and inorganic salts, and more than 82% of protein content. Similar to the parent collagen, it is composed of 18 amino acids, of which the content of imino acids Pro and Hyp is higher. The triple helix-like structure in gelatin gel is mainly maintained by intramolecular hydrogen bonding and hydrogen bonding hydration. Pro-NH and -OH of Hyp can form hydrogen bonds with other amino acid side chain groups and water molecules, which is beneficial to the stability of triple-helix structure. Gelatin is a product of collagen denaturation. It is a thermally reversible mixture with no fixed structure and relative molecular weight. Its molecular weight distribution is extremely uneven from tens of thousands to hundreds of thousands. The distribution of molecular weight greatly affects the physical and chemical properties of gelatin, especially the freezing force and viscosity. The larger the molecular weight, the higher the freezing force and viscosity. Therefore, it is important to control the molecular and molecular weight distribution of gelatin on the quality of vacant capsules. The appearance of gelatin is close to colorless or light yellow, it is transparent solid without special odor. The molecular weight is about 17.5 to 450,000, and the molecular weight of top-grade gelatin varies within 100,000 to 150,000. The freezing strength of gelatin is closely related to the degree of crosslinking reaction of gelatin. The gelatin after crosslinking is not easy to dissolve in water, which will affect the disintegration and dissolution of capsules.
